Pulled Pork + Mac ‘N’ Cheese + Barbecue Doritos® = BBQ Bliss


What do you call this jaw-dropping, belt-loosening combination of pulled pork, mac ‘n’ cheese, and Doritos® new Sweet and Tangy BBQ-flavored chips that’s trending on social media apps? We’d like to suggest “March Madness!”

Yes, from Steven Raichlen on down through the line, those of us at Barbecuebible.com are always interested in what’s new and/or hot on Planet Barbecue—food, equipment, techniques, everything. Which is how we discovered this novel way to enjoy your favorite carbs and proteins in one luscious, smoky, soul-satisfying bite.

Pulled Pork + Mac ‘N’ Cheese + Barbecue Doritos

There are two ways to do it: 1) Layer the pulled pork and mac ‘n’ cheese in a large cast iron skillet, disposable aluminum foil pan, or heat-proof casserole, then top with coarsely crushed Doritos® before indirect grilling at 350 degrees until bubbling (about 30 minutes); or 2) Create nachos by alternately layering whole Doritos®, pulled pork, and mac ‘n’ cheese in a large cast iron skillet, disposable aluminum foil pan, or pizza pan; if desired, top with additional grated cheese, crushed Doritos®, sliced green onions, sliced black olives, pickled jalapeno slices, etc. Indirect grill at 350 degrees until hot and bubbling. Finish with a drizzle of thinned sour cream. In any case, these dishes are a great way to use up any leftover smoked meats hanging around in your fridge or freezer.

Substitute chicken, brisket, or even bacon for the pork; it’s all good.

Mac 'n' Cheese with Barbecue Doritos

Either preparation would be perfect for a “March Madness” get-together. (The first four basketball games between 68 NCAA teams take place on Thursday March 16th.) Just make sure your guests bring their appetites, as this is hearty food!

As for mac ‘n’ cheese, use your own favorite stovetop recipe, preferably one that’s quite creamy. (Remember, the mac ‘n’ cheese will be baked on the grill.) We like to stir fire-roasted poblanos that have been peeled and diced into our version. But canned chiles are fine, too.
